Ingredients:
8 Cup(s) Blackberries
1 Cup(s) Sugar
1/4 Cup(s) Instant Tapioca
1/2 Juice of 1/2 Lime
1/10 Pinch of Salt
1/100 Combine & Knead together
1 Cup(s) All-Purpose Flour
1 Cup(s) Sweetened Shredded Coconut
3/4 Cup(s) Sugar
1/2 Cup(s) Pecans, Coarsely Chopped
1/2 Teaspoon(s) Baking Powder
1/4 Teaspoon(s) Salt
1/2 Cup(s) Cold Unsalted Butter, Cubed (1 stick)
1 egg
Directions:
Preheat Oven to 375 degrees.
Toss together: Berries, sugar, tapioca, lime juice and salt in bowl.
Spoon into 2 qt baking dish.
Combine: Flour, coconut, sugar, pecans, baking powder, and salt in second bowl.
Using your fingertips knead in the butter until incorporated. Mixture should look like coarse sand.
Blend in egg with fingertips. Arrange toping over berries in clumps, covering them evenly.
Bake cobblerr for 45 - 50 min. or until topping is golden and crisp, and filling is thick and bubbly.
Cool on a rack for at least 1 hour before serving.
Serve the creme anglaise.
